  • 8 oz (225g) pasta (penne or fusilli)
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 2 cups marinara sauce
  • 1.5 cups mozzarella cheese, shredded (divided)
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium heat, add olive oil and sauté bell peppers, zucchini, mushrooms, and spinach until tender (about 5-7 minutes).
  4. Stir in marinara sauce along with salt, pepper, and herbs; let simmer for about 3-5 minutes.
  5. In a mixing bowl, combine cooked pasta with sautéed vegetables and half of the mozzarella cheese; mix well.
  6. Transfer the mixture into a greased baking dish. Top with remaining mozzarella and Parmesan cheese.
  7. Bake for 25-30 minutes or until bubbly and golden brown on top.
