Description
A warming, earthy soup made with French Green lentils that hold their shape, paired with sweet root vegetables and fresh herbs.

- 1 cup French Green (Puy) lentils, rinsed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 large parsnip, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme or 3 sprigs fresh thyme
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery for 6-8 minutes until softened.
- Add parsnips and garlic, cooking for 3 minutes more.
- Stir in rinsed lentils and vegetable broth.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
- Stir in lemon juice and fresh thyme.
- Season with salt and pepper to taste.
