Description

A warming, earthy soup made with French Green lentils that hold their shape, paired with sweet root vegetables and fresh herbs.


Ingredients

  • 1 cup French Green (Puy) lentils, rinsed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large parsnip, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme or 3 sprigs fresh thyme
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery for 6-8 minutes until softened.
  3. Add parsnips and garlic, cooking for 3 minutes more.
  4. Stir in rinsed lentils and vegetable broth.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
  6. Stir in lemon juice and fresh thyme.
  7. Season with salt and pepper to taste.
