Description

A festive twist on the classic fruitcake, these cookies are chewy, spiced, and packed with colorful dried fruits for a bite-sized holiday celebration.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mixed dried fruits (cranberries, raisins, apricots)
  • 1 tbsp orange zest

Instructions

  1. Preheat oven to 350F (175C) and line baking sheets with parchment paper.
  2. Cream together softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk flour, cinnamon, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. Fold in the mixed dried fruits and orange zest by hand.
  7. Chill the dough in the refrigerator for 30 minutes.
  8. Scoop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until edges are golden.
  10. Cool on the pan for 5 minutes before transferring to a wire rack.
