- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup mixed dried fruits (cranberries, raisins, apricots)
- 1 tbsp orange zest
Instructions
- Preheat oven to 350F (175C) and line baking sheets with parchment paper.
- Cream together softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk flour, cinnamon, baking soda, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Fold in the mixed dried fruits and orange zest by hand.
- Chill the dough in the refrigerator for 30 minutes.
- Scoop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden.
- Cool on the pan for 5 minutes before transferring to a wire rack.
