Description

These garlic Parmesan chicken skewers combine aromatic garlic, sharp cheese, and juicy chicken, ideal for a lunch or quick dinner.


Ingredients

  • 1 lb boneless chicken breast, cut into cubes
  • 4 garlic cloves, minced
  • 2 tbsp extra‑virgin olive oil
  • 1/2 cup grated Parmigiano‑Reggiano cheese
  • 1 tsp Italian seasoning blend
  • Zest of 1 lemon
  • Sea salt and cracked black pepper, to taste
  • 8 bamboo skewers, soaked 30 minutes
  • 2 tbsp chopped fresh parsley for garnish (optional)

Instructions

  1. Combine chicken cubes with minced garlic, olive oil, parmesan, Italian seasoning, salt, and pepper until well coated.
  2. Thread 2–3 chicken pieces onto each bamboo skewer, leaving a small gap between grains.
  3. Preheat grill to medium‑high (about 400°F) and brush each skewer with oil.
  4. Grill for 4–5 minutes, turn, then grill another 4–5 minutes until juices run clear.
  5. Spread remaining cheese mixture over skewers and press lightly.
  6. Sauté coated skewers in a hot skillet for 1–2 minutes, turning until gold.
  7. Arrange skewers on a platter, drizzle with lemon juice, and sprinkle parsley.
