- 1 lb boneless chicken breast, cut into cubes
- 4 garlic cloves, minced
- 2 tbsp extra‑virgin olive oil
- 1/2 cup grated Parmigiano‑Reggiano cheese
- 1 tsp Italian seasoning blend
- Zest of 1 lemon
- Sea salt and cracked black pepper, to taste
- 8 bamboo skewers, soaked 30 minutes
- 2 tbsp chopped fresh parsley for garnish (optional)
Instructions
- Combine chicken cubes with minced garlic, olive oil, parmesan, Italian seasoning, salt, and pepper until well coated.
- Thread 2–3 chicken pieces onto each bamboo skewer, leaving a small gap between grains.
- Preheat grill to medium‑high (about 400°F) and brush each skewer with oil.
- Grill for 4–5 minutes, turn, then grill another 4–5 minutes until juices run clear.
- Spread remaining cheese mixture over skewers and press lightly.
- Sauté coated skewers in a hot skillet for 1–2 minutes, turning until gold.
- Arrange skewers on a platter, drizzle with lemon juice, and sprinkle parsley.
