- 1 large head of Romaine lettuce, chopped
- 1/2 cup freshly grated Parmesan cheese
- 1 egg yolk
- 2 tablespoons fresh lemon juice
- 1/2 cup extra virgin olive oil
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, minced
- 4 slices white bread
- 2 tablespoons unsalted butter
Instructions
- Cut ghost shapes out of white bread using a cookie cutter.
- Melt butter in a pan and toast ghosts until golden brown.
- Whisk egg yolk and lemon juice in a medium bowl.
- Slowly whisk in olive oil until a thick emulsion forms.
- Stir in garlic, Worcestershire sauce, and Parmesan cheese.
- Toss chopped romaine with the dressing until coated.
- Plate the salad and top with ghost croutons.
