Ingredients

  • 1 lb boneless skinless chicken thighs, cut into 1‑inch cubes
  • 2 tbsp olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional 2 tbsp crumbled feta or Greek yogurt
  • Optional pine nuts or chopped fresh parsley

Instructions

  1. Preheat grill to medium‑high (450°F).
  2. Whisk olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper in a bowl.
  3. Toss chicken cubes in the mixture; marinate 10–15 minutes at room temperature.
  4. Thread chicken onto skewers, leaving gaps between cubes.
  5. Grill skewers 3–4 minutes per side, turning once, until internal temperature reaches 165°F.
  6. Brush remaining sauce over kabobs during last minute of grilling.
  7. Serve hot with lemon wedges, optional feta or yogurt topping, and tzatziki.
