Ingredients

  • 2 pieces of Naan or flatbread
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced Kalamata olives
  • 1 cup diced English cucumber
  • 1 cup halved cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400F.
  2. Brush flatbread with olive oil and toast for 3-5 minutes.
  3. Dice cucumber and tomatoes into quarters.
  4. Whisk olive oil, lemon juice, salt, and pepper.
  5. Toss vegetables in the dressing.
  6. Spoon vegetables onto toasted flatbread.
  7. Top with crumbled feta and sliced olives.
  8. Sprinkle with dried oregano.
  9. Return to oven for 2 minutes to warm the cheese.
