Description

A vibrant, one-pan dinner combining lean ground turkey with a medley of garden vegetables and Southwest spices.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 cup frozen or canned corn
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook until browned and crumbled.
  3. Stir in diced zucchini and cook for 3-5 minutes.
  4. Mix in corn and black beans.
  5. Pour in diced tomatoes with their juices.
  6. Stir in cumin and chili powder.
  7. Simmer for 5 minutes until sauce thickens.
  8. Season with salt and pepper and serve.
