Ingredients

  • 1 cup almond flour (optional)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup maple syrup or honey
  • ½ cup unsweetened applesauce
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts (optional)
  • 1 tbsp chia seeds (optional)

Instructions

  1. Preheat oven to 350°F and line a muffin tin.
  2. Whisk oats, almond flour, baking soda, salt, and cinnamon in a bowl.
  3. Beat eggs, then stir in maple syrup, applesauce, vanilla, and mashed bananas.
  4. Combine wet and dry mixtures, mixing until just combined.
  5. Fold in walnuts and chia seeds if using.
  6. Fill muffin cups about two‑thirds full, bake 20–24 minutes.
  7. Cool on a rack before serving.
