Ingredients

  • 1 lb Rotini pasta
  • 8 oz smoked bacon, chopped
  • 2 cups sweet corn, thawed or canned
  • 1/2 red onion, finely diced
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook rotini in salted water until al dente, drain, and rinse with cold water.
  2. Fry chopped bacon until crisp, then drain on paper towels.
  3. In a large bowl, whisk together mayonnaise, cider vinegar, sugar, salt, and pepper.
  4. Add the chilled pasta, cooked bacon, corn, and diced red onion to the dressing.
  5. Fold gently with a spatula until everything is evenly coated.
  6. Refrigerate for at least 2 hours before serving.
