- 1 lb Rotini pasta
- 8 oz smoked bacon, chopped
- 2 cups sweet corn, thawed or canned
- 1/2 red onion, finely diced
- 1 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook rotini in salted water until al dente, drain, and rinse with cold water.
- Fry chopped bacon until crisp, then drain on paper towels.
- In a large bowl, whisk together mayonnaise, cider vinegar, sugar, salt, and pepper.
- Add the chilled pasta, cooked bacon, corn, and diced red onion to the dressing.
- Fold gently with a spatula until everything is evenly coated.
- Refrigerate for at least 2 hours before serving.
