Ingredients

  • 15 oz unsweetened pumpkin puree
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes with juice
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Place diced onion and minced garlic in the slow cooker.
  2. Stir in chili powder, cumin, salt, and pepper.
  3. Add drained black beans and diced tomatoes with juice.
  4. Stir in pumpkin puree until fully combined.
  5. Pour in vegetable broth and stir one last time.
