- 15 oz unsweetened pumpkin puree
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes with juice
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tbsp ground cumin
- Salt and pepper to taste
Instructions
- Place diced onion and minced garlic in the slow cooker.
- Stir in chili powder, cumin, salt, and pepper.
- Add drained black beans and diced tomatoes with juice.
- Stir in pumpkin puree until fully combined.
- Pour in vegetable broth and stir one last time.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
