A sophisticated, from-scratch green bean casserole featuring a homemade mushroom cream sauce and a crispy onion topping. No canned soups required.

- 1 lb fresh green beans, trimmed
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 8 oz cremini mushrooms, sliced
- 2 cups whole milk
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 cup fried onions
- Salt and black pepper to taste
Instructions
- Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
- Sauté sliced mushrooms in 2 tbsp butter until golden brown; remove from pan.
- Melt remaining butter in the same pan, whisk in flour, and cook for 2 minutes.
- Slowly whisk in milk and simmer until the sauce thickens.
- Stir in garlic, soy sauce, salt, pepper, and the sautéed mushrooms.
- Gently fold the blanched green beans into the cream sauce.
- Transfer mixture to a 9×13 baking dish and top with fried onions.
- Bake at 350F for 20 minutes until the topping is golden brown.
