Description

A sophisticated, from-scratch green bean casserole featuring a homemade mushroom cream sauce and a crispy onion topping. No canned soups required.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 8 oz cremini mushrooms, sliced
  • 2 cups whole milk
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 cup fried onions
  • Salt and black pepper to taste

Instructions

  1. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
  2. Sauté sliced mushrooms in 2 tbsp butter until golden brown; remove from pan.
  3. Melt remaining butter in the same pan, whisk in flour, and cook for 2 minutes.
  4. Slowly whisk in milk and simmer until the sauce thickens.
  5. Stir in garlic, soy sauce, salt, pepper, and the sautéed mushrooms.
  6. Gently fold the blanched green beans into the cream sauce.
  7. Transfer mixture to a 9×13 baking dish and top with fried onions.
  8. Bake at 350F for 20 minutes until the topping is golden brown.
