Description
A decadent autumn dessert featuring a spiced pumpkin cake with a molten butterscotch center. Perfectly balanced and surprisingly easy for home bakers.

- 4 tbsp unsalted butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- For core: 2 tbsp butter, 1/4 cup brown sugar, 2 tbsp heavy cream
Instructions
- Preheat oven to 375F (190C) and grease four 6oz ramekins with butter.
- In a small pan, melt butter, brown sugar, and cream for the core; stir until smooth, then chill in the fridge.
- Cream softened butter and brown sugar until fluffy.
- Beat in the egg, pumpkin puree, and vanilla extract.
- Sift in flour, cinnamon, baking powder, and salt; fold gently until combined.
- Fill ramekins halfway with batter, add a chilled spoonful of butterscotch core, and cover with remaining batter.
- Bake for 12-15 minutes until edges are firm but center jiggles.
- Let rest for 2 minutes, then invert onto plates.
