Description

Ingredients

  • 3 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cloves garlic, thinly sliced
  • 1 lb chicken breast, cubed
  • 8 cups chicken broth
  • 1/2 cup acini di pepe or orzo pasta
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 8 minutes.
  2. Add sliced garlic and cook for 90 seconds until fragrant but not brown.
  3. Add cubed chicken and cook until the exterior is no longer pink.
  4. Pour in chicken broth and bring to a boil, then reduce to a simmer for 20 minutes.
  5. Stir in the pasta and cook for 8-10 minutes until al dente.
  6. Remove from heat and stir in lemon juice and fresh parsley. Season with salt and pepper.
