Description

A low-carb, cheesy twist on lasagna using thick-cut zucchini rounds as a base. Topped with creamy ricotta and bubbly mozzarella.


Ingredients

Scale
  • 2 medium zucchinis, sliced into 1/2 inch rounds
  • 1 cup marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Olive oil for searing
  • Salt and pepper to taste

Instructions

  1. Slice zucchini into thick rounds and pat dry.
  2. Sear zucchini in olive oil over medium-high heat for 2-3 minutes per side.
  3. Mix ricotta with half of the Parmesan, salt, and pepper.
  4. Place zucchini rounds on a baking sheet, topping each with marinara and a dollop of ricotta.
  5. Top with mozzarella and remaining Parmesan.
  6. Broil for 3-5 minutes until cheese is golden brown.
