  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl, combine the lemon zest, minced garlic, and chopped parsley.
  2. Stir in the ricotta cheese, beaten egg, and grated Parmesan until a smooth paste forms.
  3. Add the ground chicken to the bowl and gently fold it into the mixture using a fork until just combined.
  4. Shape the mixture into 16 to 20 evenly sized meatballs, approximately 1.5 inches in diameter.
  5. Heat olive oil in a large skillet over medium heat until shimmering.
  6. Place meatballs in the skillet and sear for 5-7 minutes per side until golden brown.
  7. Lower heat to medium-low and cook for an additional 3 minutes, ensuring internal temperature reaches 165°F.
  8. Remove from heat and let rest for 2 minutes before serving.
