Description

A succulent roasted turkey featuring a sweet maple syrup glaze and a fragrant compound butter of fresh sage and thyme.

Ingredients

Scale
  • 12–14 lb whole turkey, thawed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup pure maple syrup
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 onion, halved
  • 2 carrots, cut into chunks
  • 1 lemon, halved

Instructions

  1. Preheat oven to 325F. Remove giblets and pat the turkey completely dry with paper towels.
  2. Season the inside of the cavity with salt and pepper. Stuff with onion, carrots, lemon, and extra herb sprigs.
  3. Mix softened butter with minced garlic, chopped sage, and chopped thyme to create a compound butter.
  4. Carefully loosen the skin over the breast and spread the herb butter directly onto the meat.
  5. Place turkey on a rack in a roasting pan and roast until the internal temperature of the thigh reaches 150F.
  6. Increase oven temperature to 375F. Whisk maple syrup with 1 tablespoon of melted butter and a pinch of salt.
  7. Brush the maple glaze over the entire bird, roasting for another 15-20 minutes.
  8. Continue brushing with glaze every 10 minutes until the skin is deep mahogany and the internal breast temperature hits 165F.
  9. Remove from oven and let the turkey rest on a carving board for 30 minutes before slicing.
