- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 12–15 corn tortillas
- 3 cups shredded Mexican blend cheese
- 1 can (16 oz) refried beans
- 1/2 cup sour cream
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium-high heat; drain excess fat.
- Stir in taco seasoning and diced tomatoes; simmer for 5-7 minutes.
- Spread a thin layer of refried beans on the bottom of a 9×13 inch baking dish.
- Place a layer of corn tortillas over the beans.
- Add a layer of seasoned beef, followed by shredded cheese and a drizzle of sour cream.
- Repeat layers (tortillas, beef, cheese, sour cream) twice more.
- Top with a final layer of tortillas and the remaining cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let rest for 10 minutes before slicing.
