- 4 tbsp cold unsalted butter, cubed (for streusel)

Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- Cream together softened butter and granulated sugar until pale and fluffy.
- Beat in eggs one at a time, then stir in the vanilla extract.
- Alternately mix in the flour, baking powder, and salt with the milk until just combined.
- Gently fold in the diced apple pieces using a spatula.
- Prepare streusel by rubbing cold butter into brown sugar, flour, and cinnamon until crumbly.
- Pour batter into the pan and top evenly with the streusel mixture.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Cool in the pan for 20 minutes before removing and slicing.
