Description

A classic, comforting coffee cake featuring a moist cinnamon-spiced batter, chunks of tart fresh apples, and a buttery, crisp streusel topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 2 cups peeled and diced Granny Smith apples
  • 1/2 cup brown sugar (for streusel)
  • 1/2 cup all-purpose flour (for streusel)
  • 4 tbsp cold unsalted butter, cubed (for streusel)
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Cream together softened butter and granulated sugar until pale and fluffy.
  3. Beat in eggs one at a time, then stir in the vanilla extract.
  4. Alternately mix in the flour, baking powder, and salt with the milk until just combined.
  5. Gently fold in the diced apple pieces using a spatula.
  6. Prepare streusel by rubbing cold butter into brown sugar, flour, and cinnamon until crumbly.
  7. Pour batter into the pan and top evenly with the streusel mixture.
  8. Bake for 45-55 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 20 minutes before removing and slicing.
