- 1 lb ground beef
- 1 cup orzo pasta (uncooked)
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F.
- Brown ground beef in an oven-safe skillet over medium-high heat; drain excess fat.
- Sauté diced onion and garlic for 3 minutes until translucent.
- Stir in tomato paste and cook for 1 minute to toast.
- Add dry orzo, stirring to coat in fat, then pour in beef broth.
- Cover with a lid and bake for 15-20 minutes until pasta is tender.
- Top with mozzarella and parmesan and bake uncovered for another 5 minutes until golden.
