Ingredients

  • 1 lb ground beef
  • 1 cup orzo pasta (uncooked)
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Brown ground beef in an oven-safe skillet over medium-high heat; drain excess fat.
  3. Sauté diced onion and garlic for 3 minutes until translucent.
  4. Stir in tomato paste and cook for 1 minute to toast.
  5. Add dry orzo, stirring to coat in fat, then pour in beef broth.
  6. Cover with a lid and bake for 15-20 minutes until pasta is tender.
  7. Top with mozzarella and parmesan and bake uncovered for another 5 minutes until golden.
