Ingredients

  • 2½ cups all‑purpose flour
  • ⅓ cup unsalted butter, cold and cubed
  • ⅓ cup granulated sugar
  • Pinch sea salt
  • 1 egg, whole
  • 1 teaspoon vanilla extract
  • 45 fresh peaches, sliced
  • 1 teaspoon lemon zest
  • Powdered sugar for dusting
  • Optional apricot glaze or clear gravy

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine flour, sugar and salt.
  3. Add cold butter and mix until crumbly.
  4. Stir in egg and vanilla until dough is cohesive.
  5. Press dough into tart pan, chill 30 minutes.
  6. Arrange peach slices, drizzle lemon zest, bake 25‑30 minutes.
  7. Cool, dust with powdered sugar, serve.
