A hearty and comforting slow cooker soup featuring tender salted beef, sweet cabbage, and root vegetables in a rich savory broth.


Ingredients

  • 34 lb Corned Beef brisket
  • 1 medium head of green cabbage, chopped
  • 3 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 3 gold potatoes, cubed
  • 1 tsp black peppercorns
  • Fresh parsley for garnish

Instructions

  1. Place the corned beef brisket in the bottom of a 6-quart slow cooker.
  2. Add the diced onion, sliced carrots, and celery around the beef.
  3. Stir in the minced garlic and black peppercorns.
  4. Pour the beef broth over the ingredients until they are mostly submerged.
  5. Cover and cook on Low for 8 hours or High for 4-5 hours until beef is tender.
  6. Stir in the chopped cabbage and cubed potatoes during the last 60-90 minutes of cooking.
  7. Remove the beef, shred or slice it, and return it to the pot.
  8. Garnish with fresh parsley before serving.
