- 3–4 lb Corned Beef brisket
- 1 medium head of green cabbage, chopped
- 3 large carrots, sliced
- 2 stalks celery, sliced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 3 gold potatoes, cubed
- 1 tsp black peppercorns
- Fresh parsley for garnish
Instructions
- Place the corned beef brisket in the bottom of a 6-quart slow cooker.
- Add the diced onion, sliced carrots, and celery around the beef.
- Stir in the minced garlic and black peppercorns.
- Pour the beef broth over the ingredients until they are mostly submerged.
- Cover and cook on Low for 8 hours or High for 4-5 hours until beef is tender.
- Stir in the chopped cabbage and cubed potatoes during the last 60-90 minutes of cooking.
- Remove the beef, shred or slice it, and return it to the pot.
- Garnish with fresh parsley before serving.
