- 2 lbs boneless skinless chicken breasts
- 2 cups pineapple chunks
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons apple cider vinegar
- 1 tablespoon cornstarch (for thickening)
Instructions
- Sear chicken breasts in a skillet over medium-high heat for 3 minutes per side.
- Place seared chicken in the slow cooker and top with pineapple chunks.
- Whisk together soy sauce, brown sugar, garlic, ginger, and vinegar in a bowl.
- Pour the sauce over the chicken and pineapple.
- Cover and cook on Low for 6-8 hours or until chicken shreds easily.
- Remove chicken; whisk cornstarch with water and stir into the sauce.
- Simmer sauce on high for 10 minutes until thick and glossy.
