Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 cups pineapple chunks
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch (for thickening)

Instructions

  1. Sear chicken breasts in a skillet over medium-high heat for 3 minutes per side.
  2. Place seared chicken in the slow cooker and top with pineapple chunks.
  3. Whisk together soy sauce, brown sugar, garlic, ginger, and vinegar in a bowl.
  4. Pour the sauce over the chicken and pineapple.
  5. Cover and cook on Low for 6-8 hours or until chicken shreds easily.
  6. Remove chicken; whisk cornstarch with water and stir into the sauce.
  7. Simmer sauce on high for 10 minutes until thick and glossy.
