- 4 cups fresh corn kernels
- 1/2 cup diced Hatch green chiles
- 1/4 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup crumbled Cotija cheese
- 2 tbsp lime juice
- 1 tbsp lime zest
- 3 tbsp extra virgin olive oil
- Salt and black pepper to taste
Instructions
- Heat a cast-iron skillet over high heat with 1 tablespoon of oil.
- Add corn kernels and sear without stirring for 3-5 minutes until charred.
- Sauté diced Hatch chiles for 2 minutes until softened.
- Transfer corn and chiles to a bowl and cool completely.
- Whisk together lime juice, lime zest, and remaining olive oil.
- Fold in red onion and cilantro.
- Toss with the dressing and top with crumbled Cotija cheese.
