- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup crushed freeze-dried strawberries
- 1/4 cup sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and 3/4 cup sugar until light and fluffy.
- Beat in eggs and vanilla extract until smooth.
- Whisk together flour, cornstarch, baking soda, and salt, then fold into the wet ingredients.
- Mix the crushed freeze-dried strawberries with 1/4 cup sugar in a small bowl.
- Scoop 2 tbsp of dough per cookie, roll into balls, and press the strawberry mixture firmly on top.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on the pan for 5 minutes before transferring to a wire rack.
