- 1–1.5 lb pork loin, sliced into medallions
- 1 cup fresh pineapple chunks
- 1/3 cup low‑sodium soy sauce
- 2 Tbsp light brown sugar
- 3 garlic cloves, minced
- 1 Tbsp fresh ginger, minced
- 2 scallions, sliced
- 1 tsp sesame oil (optional)
- 2 Tbsp olive oil or vegetable oil
- Salt & pepper to taste
- 1 Tbsp lime juice (optional)
Instructions
- Pat the pork dry and season with salt and pepper. Sear each piece in a hot skillet until a golden crust forms, then transfer to the slow cooker.
- In the same skillet sauté garlic, ginger, and scallions until fragrant, then add pineapple juice and soy sauce; whisk until slightly thickened.
- Add the pineapple chunks to the slow cooker, pour in the sauce mixture, and gently mix to coat the pork.
- Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the pork reaches 145°F.
- During the last 30 minutes, switch to high, drizzle any remaining sauce, and let it reduce into a glossy glaze.
- Serve the pork slices over jasmine rice, garnishing with fresh scallions and a squeeze of lime if desired.
