Description

A succulent, fall-off-the-bone whole chicken prepared in a slow cooker for maximum tenderness and deep, infused flavor.


Ingredients

  • 1 whole chicken (35 lbs)
  • 4 tbsp unsalted butter, softened
  • 1 head of garlic, cloves peeled
  • 1 lemon, halved
  • 2 sprigs fresh rosemary, chopped
  • 2 sprigs fresh thyme, chopped
  • 2 tsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Pat the chicken dry with paper towels and remove giblets from the cavity.
  2. Stuff the lemon halves and garlic cloves inside the chicken.
  3. Mix chopped rosemary, thyme, salt, and pepper into the softened butter; rub it under the skin of the breasts.
  4. Sear the chicken in a skillet over medium-high heat until golden brown on all sides.
  5. Place the seared chicken into the crockpot on low heat for 6 to 8 hours.
  6. Verify the internal temperature reaches 165°F in the thickest part of the thigh.
  7. Remove from pot and let the chicken rest for 15 minutes before carving.
