Description
A succulent, fall-off-the-bone whole chicken prepared in a slow cooker for maximum tenderness and deep, infused flavor.

- 1 whole chicken (3–5 lbs)
- 4 tbsp unsalted butter, softened
- 1 head of garlic, cloves peeled
- 1 lemon, halved
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh thyme, chopped
- 2 tsp kosher salt
- 1 tsp black pepper
Instructions
- Pat the chicken dry with paper towels and remove giblets from the cavity.
- Stuff the lemon halves and garlic cloves inside the chicken.
- Mix chopped rosemary, thyme, salt, and pepper into the softened butter; rub it under the skin of the breasts.
- Sear the chicken in a skillet over medium-high heat until golden brown on all sides.
- Place the seared chicken into the crockpot on low heat for 6 to 8 hours.
- Verify the internal temperature reaches 165°F in the thickest part of the thigh.
- Remove from pot and let the chicken rest for 15 minutes before carving.
