- 4 bone-in, skin-on chicken thighs
- 1 lb baby gold potatoes, halved
- 1/2 cup unsalted butter, melted
- 6 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 tsp dried oregano
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- Season chicken with salt and pepper.
- Sear chicken skin-side down in a skillet for 5 minutes.
- Place halved potatoes in the slow cooker.
- Mix melted butter, garlic, lemon zest, and oregano; pour over potatoes.
- Place seared chicken on top of potatoes and drizzle with remaining butter.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Stir in fresh lemon juice and parsley before serving.
