- 3–4 lb Corned Beef Brisket
- 1 head Green Cabbage, cut into wedges
- 4 large Carrots, chopped
- 1 lb Potatoes, cut into chunks
- 1 Onion, sliced
- 2 cups Beef Broth
- 1 packet Pickling Spices
Instructions
- Rinse the corned beef brisket under cold water to remove excess surface salt.
- Place sliced onions and chopped carrots at the bottom of the slow cooker.
- Lay the brisket on top of the vegetables, fat side up.
- Pour in beef broth and sprinkle pickling spices around the meat.
- Cover and cook on Low for 8-10 hours until the beef is tender.
- Add cabbage wedges and potato chunks around the beef during the last 2-3 hours of cooking.
- Remove the beef and let it rest for 15 minutes before slicing against the grain.
