- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups low‑sodium chicken broth
- 2 cups shredded cooked chicken
- 1 cup diced carrots
- 1 cup diced celery
- 2 cups fresh spinach
- 1 cup whole-wheat chicken tortellini
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- Optional: pinch of red pepper flakes
- Juice of 1 lemon
- 2 tablespoons grated Parmesan
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat. Add onion and garlic; sauté until fragrant.
- Stir in carrots, celery, and chicken broth; bring to a boil.
- Add basil, oregano, smoked paprika, salt, pepper, and red pepper flakes; simmer 5 minutes.
- Fold in shredded chicken, spinach, and tortellini; simmer 8–10 minutes until tortellini is al dente.
- Turn off heat, stir in lemon juice and Parmesan; taste and adjust seasoning.
- Serve hot, garnished with parsley.
