- 2 lbs ground beef (80/20 blend)
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp Worcestershire sauce
- 2 tbsp apple cider vinegar
- 1 medium yellow onion, finely diced
- 1 green bell pepper, finely diced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 6 brioche buns
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease and transfer meat to the slow cooker.
- In the same skillet, sauté the diced onion and green pepper until softened (about 5 minutes). Add minced garlic for the last minute, then transfer vegetables to the slow cooker.
- In a medium bowl, whisk together ketchup, brown sugar, Worcestershire sauce, and apple cider vinegar until smooth.
- Pour the sauce over the beef and vegetables in the slow cooker. Stir well to combine.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- Stir the mixture once more. If too liquid, leave the lid off for the final 30 minutes of cooking.
- Toast buns with butter on a griddle and scoop a generous portion of the beef mixture onto each bun.
