Ingredients

  • 2 lbs ground beef (80/20 blend)
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 1 medium yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 brioche buns

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease and transfer meat to the slow cooker.
  2. In the same skillet, sauté the diced onion and green pepper until softened (about 5 minutes). Add minced garlic for the last minute, then transfer vegetables to the slow cooker.
  3. In a medium bowl, whisk together ketchup, brown sugar, Worcestershire sauce, and apple cider vinegar until smooth.
  4. Pour the sauce over the beef and vegetables in the slow cooker. Stir well to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Stir the mixture once more. If too liquid, leave the lid off for the final 30 minutes of cooking.
  7. Toast buns with butter on a griddle and scoop a generous portion of the beef mixture onto each bun.
