  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened (3 packages)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • ¾ cup Bailey’s Irish Cream
  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of the prepared pan.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
  4. Incorporate sour cream and Bailey’s Irish Cream, blending until smooth. Add eggs one at a time, mixing gently after each addition.
  5. Pour the mixture over the crust and smooth the top with a spatula.
  6. Bake for 55-60 minutes or until set but slightly jiggly in the center. Turn off the oven and let cool inside for an hour before chilling in the refrigerator for at least four hours or overnight.
