  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 can (14.9 oz) Guinness stout
  • 2 medium onions, chopped
  • 3 medium carrots, sliced
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear beef cubes until browned on all sides (5-7 minutes per batch). Remove and set aside.
  2. In the same pot, sauté onions and carrots until onions are translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Pour in Guinness stout and scrape up any browned bits from the bottom of the pot. Add beef broth to cover ingredients. Stir to combine.
  4. Return seared beef to the pot along with diced potatoes and bouquet garni. Season with salt and pepper. Bring to a boil then reduce heat to low.
  5. Cover and simmer for at least 2 hours or until beef is fork-tender, stirring occasionally.
