- 2 lbs beef chuck, cut into 1-inch cubes
- 1 can (14.9 oz) Guinness stout
- 2 medium onions, chopped
- 3 medium carrots, sliced
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 bouquet garni (thyme, bay leaves, parsley)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear beef cubes until browned on all sides (5-7 minutes per batch). Remove and set aside.
- In the same pot, sauté onions and carrots until onions are translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Pour in Guinness stout and scrape up any browned bits from the bottom of the pot. Add beef broth to cover ingredients. Stir to combine.
- Return seared beef to the pot along with diced potatoes and bouquet garni. Season with salt and pepper. Bring to a boil then reduce heat to low.
- Cover and simmer for at least 2 hours or until beef is fork-tender, stirring occasionally.
