Instructions
- Allow the pre-baked pie crust to cool completely on a wire rack.
- In a medium saucepan, whisk together the granulated sugar and cornstarch until combined.
- Stir in the heavy cream and salt, then place the pan over medium heat.
- Bring the mixture to a gentle simmer, stirring constantly to prevent lumps.
- Remove the pan from the heat and add the chopped white chocolate.
- Let the chocolate sit for two minutes, then stir until completely smooth.
- Stir in the vanilla extract and remove from heat.
- Pour the filling into the cooled pie crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or preferably overnight, until firm.
