Instructions

  1. Allow the pre-baked pie crust to cool completely on a wire rack.
  2. In a medium saucepan, whisk together the granulated sugar and cornstarch until combined.
  3. Stir in the heavy cream and salt, then place the pan over medium heat.
  4. Bring the mixture to a gentle simmer, stirring constantly to prevent lumps.
  5. Remove the pan from the heat and add the chopped white chocolate.
  6. Let the chocolate sit for two minutes, then stir until completely smooth.
  7. Stir in the vanilla extract and remove from heat.
  8. Pour the filling into the cooled pie crust and smooth the top with a spatula.
