- 1 lb boneless skinless chicken breast, diced
- 1 cup uncooked orzo pasta
- 6 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté carrots and celery for about 5-7 minutes until softened.
- Add diced chicken to the pot and cook until the outside is no longer pink.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer for 10 minutes.
- Stir in the orzo pasta and cook for 8-10 minutes until tender.
- Remove from heat and stir in the fresh lemon juice and zest.
- Season with salt and pepper, then garnish with fresh parsley before serving.
