- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup lemon curd
Instructions
- Preheat oven to 350F (175C) and line two baking sheets with parchment paper.
- Cream the softened butter and granulated sugar in a large bowl until pale and fluffy.
- Stir in the lemon zest and vanilla extract until fully combined.
- Add the flour and salt, mixing on low speed just until the flour is incorporated.
- Wrap the dough in plastic and refrigerate for 30 minutes.
- Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheets.
- Press your thumb or a small spoon into the center of each ball to create a well.
- Fill each indentation with about 1 teaspoon of lemon curd.
- Bake for 10-12 minutes or until the edges are barely golden.
- Cool on the pan for 5 minutes before transferring to a wire rack.
